Friday Foodie

One Ball Yellow Squash. Single serving size. Really tasty. Easy to stuff and easy to grill.
Gotta love it.
I made Grilled Squash Gremolata the other night. I cut the One Ball into 1/4 inch slices. Grilled them up, tossed them with the lemon juice, oil, parsley mix (follow link for recipe) and my summery side dish was done!
We served this with grilled chicken thighs with peach salsa. No need to spend money going out to eat with food like this from the garden every night!
